- 3/4 cup coconut oil
- 1 cup brown sugar
- 1/2 cup granulated white sugar
- 2 eggs
- 1 tsp vanilla extract
- 2-1/4 cup flour
- 1 tsp baking powder
- 1 tsp salt
- 2 cups chocolate chips

Directions for preparing Coconut Oil Chocolate Chip Cookies
Preheat oven to 350ºF. Line a baking sheet with parchment paper.
Beat together coconut oil, brown sugar, and white sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in vanilla.
In an additional bowl, combine the flour, baking powder, and salt in a small bowl. Slowly add flour mixture to the mixture of coconut oil, sugar, eggs, and vanilla. Then stir in chocolate chips last.
Scoop dough into 2 Tbsp rounds. Then place on a prepared baking sheet with parchment paper. Bake for 10-12 minutes, until bottoms are golden brown.
